I thought I'd share the recipe for one of my very favorite summer desserts! If you've never taken the time to try this, do yourself a favor and run to the grocery store (or better yet, the farmer's market), and get busy! It's absolutely wonderful.
FRUIT PIZZA
Pillsbury Sugar Cookies tube dough - Spread onto a cookie sheet and bake as directed until golden brown. Let cool completely.
Mix together: 4 oz. cream cheese and 4 oz. Cool Whip, plus 1/4 c. sugar. Spread onto cooled cookie crust.
Arrange on top: sliced strawberries, kiwi, CANNED peaches, bananas (soaked in the PEACH JUICE), mandarin oranges, grapes, blueberries, and pineapple tidbits.
Drizzle with glaze...
GLAZE:
Mix together: 3/4 c. pineapple juice (plus a little more), 1/4 c. sugar, and 1 T. cornstarch. Cook until clear and thick.
Try to keep from eating too much. :)

Yum, This was always the perfect thing to take to a gathering, it always looks so pretty. My version didn't have a glaze topping, I'll have to try it that way, thanks. CJ ok;-)
