Fall is the BEST time of year for baking! And for giving away some fall love! If you've never been to any of the 200+ shopping sites from CSN Stores, you're in for a treat. Mom and I are giving away a $55 (one time use) gift certificate from CSN Stores to one person who leaves a comment here on this blog, this post. After you've left your comment, go whip up these fabulous pumpkin muffins from Marsha (hi, mom) and while you're enjoying one with butter and hot coffee, take a look at all the stuff that CSN Stores has to offer!
PUMPKIN MUFFINS
1-1/3 cups granulated sugar
1/2 cup of butter
2 eggs
2 cups flour
4 tsp baking powder
1 tsp cinnamon
1/2 tsp salt
1 cup of pumpkin
4 Tbsp of of heavy whipping cream, but you can use milk
Topping: 1/2 c. brown sugar, pecans
Cream together sugar and butter. Add eggs and beat well. In a separate bowl, combine flour, baking powder, cinnamon, and salt. In yet another bowl, combine pumpkin and whipping cream or milk. Add flour mixture and pumpkin alternately to creamed mixture, beating well after each addition. Spoon into paper liners. Then combine about 1/2 c. of brown sugar and some chopped pecans. Top the muffins with as much as you want. Bake at 350 degrees for about 18 minutes, but make sure they are done.
Enjoy! (Don't forget the butter and hot coffee.)

I'm wondering if you could carmelize pecans like you can with walnuts. Candied nuts are oh so good! CSN is a great bunch of stores. I could do all my Christmas shopping there.

I love anything pumpkin - unfortunately right now we cannot get any canned puree since there is a shortage and we ( Germany) are probably last on the list to get any. But a $55 GC for some shopping would help a whole bunch.
