One year I grew a "salsa garden" to make my favorite salsa recipe. Roma tomatoes, jalapenos, and basil.. yes, basil! Here is my recipe for Sweet Garden Salsa... it's tangy and tart and sweet and verrrry garlic-y. You'll love it!
SWEET GARDEN SALSA
Finely chop:
3 c. tomatoes (about 12 Romas... I use Romas bc they hold their innards the best!)
1 small purple onion
1 green onion
2 small jalapeno peppers (I use mild jalapenos)

2 T. dried basil (throw in some fresh, too!)
Juice from 1 small lime
4 cloves of garlic (or less if you don't want such a strong garlic taste), minced
2 T. red wine vinegar
1 1/2 tsp sugar
1 tsp. coarse salt
1 1/2 tsp cumin
1/2 tsp. chili powder
1/8 tsp. crushed red pepper (OR Weber's Kick'n Chicken spice, which is what I use)
Mix everything together and refrigerate... this is better if it sits overnight. Serve with your favorite corn tortilla chips!
This is such a summer treat, especially if you've grown everything yourself. :)

Can this recipe be canned? If so, how long would you have to process it in a hot water bath?
Also, we LOVED your grilled burrito recipe! It's a keeper!

I have no idea! I've never canned tomatoes or anything before, but I don't see why not? :)
