I'm finally getting around to getting this posted! Thank you, Aud, for sending it to me AGES ago.. this is such a delicious recipe, but make sure you watch the veggies as they cook. Dear Joann's batch didn't turn out so well bc her oven got very hot, very quickly! Mine actually need to cook longer than recommended, bc my oven takes longer to heat up. Just use your best judgment!
AUDREY'S ROASTED VEGGIES
Using as much or as little as you want, cut up the following into bite-sized pieces:
cauliflower florets
Drizzle olive oil and mix over all the veggies.
Add dill, seasoned salt, pepper, thyme, oregano, and any other tasty seasoning blend or spice.
Bake at 375 for an hour or two until desired done-ness. I like my veggies very crispy and well well done!
(Btw, Aud cooks hers for a REALLY long time, mine takes just over 2 hours, and she got me addicted to using pre-roasted garlic in olive oil instead of fresh garlic cloves.)
I serve mine over angel hair pasta, but Aud likes hers plain. Enjoy!

i wonder if mine would all cook at that temp?
i don't mind if you show them the picture of what happens when you cook them too long at 400 degrees! LOL!!
i may try it again. or i may just try smaller amounts in the toaster oven vs. the gas oven?!

Made Audrey's vegetables last night and it was a big hit with my husband. Made enough to fill two 11" x 13" pans. Guess what's for dinner tonight!! LOL
