These are sooo good! Sabrina, who is a little standoffish when it comes to baked goods, can't get enough of them. :) They're especially good heated up in the microwave, if you've still got some sitting around the next day.
CONGO BARS
2 3/4 c. all-purpose flour
2 1/2 tsp baking powder
1/2 tsp salt
2/3 c. butter, softened
1 lb. light brown sugar
3 eggs
1 tsp vanilla
11.5 ounce package of semi-sweet chocolate chips
Preheat oven to 350 degrees.
Sift flour, baking powder and salt in a large bowl. Set aside.
With a mixer, combine butter and sugar until well blended.
Add eggs, one at a time, to sugar mixture, mixing on low between each addition.
Mix in vanilla.
Add the flour mixture to the batter and mix just until the flour is blended in.
Stir in chocolate chips.
Grease or spray with non-stick cooking spray a 9 x 13 pan and spread batter evenly into it. Bake for 30 minutes or so until the top is golden brown. Don't overbake it or it will be dry!
Serve nice and warm, either by themselves or with a scoop of vanilla ice cream and a drizzle of chocolate (or caramel!) syrup. And if you're Sophie, you'll bury the whole thing in Reddi-Whip.
