Because I'm gluten-intolerant, I've been experimenting with gluten-free flours in my baking - and not confessing any of it to my family. This is a lemon-coconut pound cake (originally from Southern Living) made with King Arthur gluten-free flour. My husband told me to never make it again - bc he can't stop eating it. ;)
I will probably be posting this recipe to my Four Seasons Cafe blog this week, so watch for it! It's delicious, even if you don't care for coconut!
